Change of Activity of Blood Serum Transferases after High Hydrostatic Pressure Treatment

High hydrostatic pressure treatment has been the subject of intensified research in recent years after it has established itself as serious factors of influence on biopolymers.

The aim of our study was to determine the effect of high hydrostatic pressure on the activity of blood serum transferases - enzymes, realizing the disamination processes (reverse transfer of aminoacid aminogroups on ketoacids) by means of transfer of different chemical radicals from the donors to the acceptors.

The investigation was carried out in the hydrostatic pressure range up to 500MPa.
The change of activity for alanine- and aspartate- aminotransferases and gamma-glutamine transferase (ALT, AST, GGT) in dependence on the high hydrostatic pressure value has been established.

Obtained results have been analyzed taking into account the simultaneous changes of another components of blood serum.
